Do you have any ideas what the problem might be or how I can further debug the issue? I am kind of lost.

This server is not dedicated to run MySQL only. LEMP Stack including Nginx and PHP-FPM are running as well. innodb_buffer_pool_size = 185M was calculated by using this formula:
